Instructions
Cook Sausage and Vegetables
Heat olive oil in a large skillet over medium-high heat. Add Italian sausage links and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove sausages and slice into 1/2-inch rounds. In the same skillet with rendered fat, add diced onion and bell pepper. Cook for 4-5 minutes until softened, then add minced garlic and cook for 1 more minute.
Pro Tip:
Don't overcrowd the sausages in the pan - cook in batches if needed for better browning
Cook Pasta and Make Sauce
Meanwhile, bring a large pot of salted water to boil and cook penne pasta according to package directions until al dente, about 10-12 minutes. Reserve 1/2 cup pasta water before draining. In the skillet with vegetables, add diced tomatoes, chicken broth, red pepper flakes, and Italian seasoning. Simmer for 5 minutes, then stir in heavy cream and return sliced sausages to the pan.
Pro Tip:
Save some pasta water - its starch helps bind the sauce to the pasta perfectly
Combine and Finish
Add the drained pasta to the skillet and toss to combine with the sauce. Add pasta water as needed to achieve desired consistency. Remove from heat and stir in half of the Parmesan cheese and fresh basil. Season with salt and pepper to taste. Serve immediately with remaining Parmesan cheese on top.
Pro Tip:
Toss the pasta off the heat to prevent the cheese from becoming stringy, and serve immediately while hot
