Instructions
Season and Prepare Glaze
Preheat oven to 425°F. Pat chicken thighs dry and season both sides with salt, pepper, and paprika. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, and cayenne pepper until smooth.
Pro Tip:
Room temperature chicken cooks more evenly, so take it out of the fridge 15 minutes before cooking

Sear the Chicken
Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5-6 minutes until skin is golden brown and crispy. Don't move them during this time.
Pro Tip:
Don't overcrowd the pan - cook in batches if necessary for proper browning

Flip and Glaze
Flip chicken thighs over and brush generously with the honey mustard glaze. Reserve some glaze for serving. The skin should be beautifully golden and crispy.
Pro Tip:
Use a pastry brush or spoon to coat evenly - the glaze will caramelize beautifully in the oven

Bake to Perfection
Transfer the skillet to the preheated oven and bake for 15-18 minutes until internal temperature reaches 165°F. Brush with remaining glaze halfway through cooking for extra flavor.
Pro Tip:
Let rest for 5 minutes before serving to allow juices to redistribute
