Instructions
Cook the Chicken
Season chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Remove from heat, let rest for 5 minutes, then slice into strips.

Pound chicken to even thickness for uniform cooking, or use a meat thermometer to ensure doneness

Prepare Caesar Dressing
In a small mixing bowl, whisk together mayonnaise, lemon juice, minced garlic, Dijon mustard, and Worcestershire sauce. Add minced anchovy fillets if using and half of the Parmesan cheese. Whisk until smooth and creamy. Season with salt and pepper to taste.

For extra flavor, mash the anchovies into a paste before adding to the dressing

Prepare the Salad Base
Wash and thoroughly dry the romaine lettuce, then chop into bite-sized pieces. Place the lettuce in a large salad bowl. Add the sliced warm chicken on top of the lettuce along with the croutons.

Dress and Serve
